Shrimp Curry with Thai Coconut milk




Ingredients:

1. Giant River Prawn /Shrimp -- amount 4 (total 1/2 lb) with head and chelate legs

2. Thai Coconut milk 13.5 fl oz  

3. Vegetable oil 1.5 tbs

4. Onion powder 1 tbs

5. Garlic powder 1 tbs

6. Ginger powder 1/2 tsp

7. Paprika powder 1tsp

8. Salt to taste (1/2 tsp)

9. Black pepper 1/4 tsp

10. Sugar 1/2 tsp

11. Dried Pineapple ring 1

12. Thai grass leaf

13. Green chili  --amount 2

14. Sriracha hot chili sauce 1/2 tsp

15. Basil leaves

16. Water (1.5 measuring cup)









Procedure:

1. Cut the walking legs of raw shrimps, tail too. I will not use these. Take out the shell of the body and tail too.Now wash these properly. I use hot water to wash these shrimps. Head is the main part here and chelate legs too. These will add the amazing flavor. See the above pic.

2. In a pan add 1.5 tbs vegetable oil. Fry the shrimps - both sides just for 2 minutes.

3. Now add onion powder , garlic powder, ginger powder, paprika powder , Thai grass,  salt , black pepper, sugar and add 1.5 cups water to cook the shrimps with these ingredients.

4. Wait 5 minutes. Cover with lid.

5. After 5 minutes add coconut milk and dried pineapple ring. 

6. Wait 6-7 minutes until the shrimps cook completely.

7. After 6-7 minutes finishing touch like green chili, sriracha hot chili sauce and finally basil leaves. Remove the Thai lemon grass from the curry.

8. Switch off the stove.

9. Enjoy with hot rice.
