Salmon Patties Wrapped with Skin - Salmon Kofta  
স্যালমন মাছের কোফতা 




Ingredients

1. Salmon fish 1/2 lb

2. Salmon skin 12/14 inches length & 6/7 inch width

 (Approx. rectangular shape)

3. Salt to taste (1/2 tsp)

4. 1/2 cup sliced onion

5. 1/4 th cup spring onion

6. Cilantro 1/4th cup

7. Fish sauce 1/2 tsp

8. Tomato ketchup 1/2 tbsp

9. Onion Powder 1tsp

10. Garlic powder 1 tbsp

11. Ginger powder 1/4th tsp

12. Paprika powder 1 tsp 

13. 1/4 of a Jalapeno

14. 1 Egg

     15. Black pepper 1/4 tsp

16. Vegetable Oil for frying 1/4 cup

        17. Lemon juice 1/2 tsp



Procedure



1. First of all, you need Salmon skin, so for this, you need a fillet of Salmon with Skin On at least 14 inches long, 6/7 inch width. The tail portion will not work as it consists of less width. 

2. Very carefully you have to remove the skin. It is recommended not to use a knife but with hand. Place the Fillet (Skin side down) on a chopping board. Hold a front end corner tightly. Apply little force, separate the skin from fillet just with hand. (video link is given below). 

3. Now with a knife (safe to use opposite side) remove the fish scales. Better set it inside the sink under tap water. So that fish scales will easily be washed away.

4. Now cut the skin like a rectangular shape 12/14 inch long, 6/7 inch width. Set it on a cutting board.

5. With a knife, cut (shredded) the Salmon fillets into very little pieces. 

6. In a bowl collect the small pieces of salmon approx 1/2 lb. Mix all the ingredients ( salt, pepper, sliced onion & Jalapeno, spring onion, cilantro, fish sauce, tomato ketchup, onion powder, garlic powder, ginger powder, paprika powder, lemon juice and 1/2 of a beaten egg (other 1/2 will use later for egg wash on top of the skin)) with sliced salmon.

7. Now use hand to mix them all. 

8. Put the mixer on half of the rectangular skin and cover it with the other half portion of the skin.


9. Put little egg wash on the top skin. Ready to fry.


10. In a frying pan, heat oil using medium heat. Very gently place transfer the raw salmon patties (wrapped with skin) from the cutting board to the hot oil. Better to use medium-low heat now. Because low heat will help not burn the skin but the skin wrapped raw fish will cook properly. 


11. Fry 3 minutes, change the side. Again after 3 min change the side. But add egg wash on top each time you are going to change the sides. Do it two times but don't burn the skin.


12. After 10/12 minutes of frying- it is ready to eat. Transfer it to a paper towel. It will help to absorb the extra oil.

13. Enjoy this Crispy Salmon Skin wrapped patty with rice or bread.
