Spicy Crepe

 

Ingredients

1. Rice flour 1 cup
2. All purpose flour 1/4th cup
3. Salt to taste (less then 1 tsp)
4. Egg: Qty 2
5. Onion slice 1tbs
6. Green chili or Jalapeno chopped 1 tsp
7. Cilantro 1/4th cup
8. For oil brushing 1/2 tsp oil
9. 2 cups of water (normal) for batter making




Procedure :

1.  In a bowl, whisk together the rice flour and all purpose flour with salt. Gradually add 2 cups of water, stirring to combine and beat until smooth. Add beaten eggs, chopped cilantro, onion ,2 chilies. 
Then mix again. Batter should be thin, runny and lump free. (see the video)

2. Heat a frying pan over medium high heat. Pour the oil 1/2 tsp just for the first crepe. Coat the surface evenly with oil using a brush.

3. 1/2 cup batter is enough for 8 inch pan. Pour the batter onto the pan, using 1/2 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

4. Cook the crepe for about 2/3 minutes, until the bottom is light brown. Loose with spatula and take it out, no need to turn other side.  Repeat with remaining batter. Serve hot with curry meat or vegetables or thick lentil soup.

Tips

Use non-stick cookware to make crepe.
